Short answer: Drive out. The Eliot Arms at Tregadillett, the Springer Spaniel at Treburley and the Archer Arms at Lewannick are all a few miles out and all better than anything in the town centre.
Launceston town centre has perfectly decent pubs. The genuinely good ones are in the villages around it, and none is more than about five miles away.
A properly traditional pub crammed with antiques, old banknotes and curios. Generous portions, homemade desserts, and one of the best-loved pubs in the area. Dog-friendly.

These are village pubs with limited covers, and several are popular enough to fill on a weekday. Booking ahead is worth doing rather than driving out hopefully.
These are all a few miles out on country lanes with no realistic public transport. Worth sorting a driver or a taxi in advance — rural Cornwall taxi availability in the evening is genuinely limited, especially in summer.
