They're different enough to justify visiting both across a longer stay — Roskilly's leans classic Cornish dairy, Ciuri Ciuri leans proper Italian technique, and comparing the two is genuinely part of the fun.

Ciuri Ciuri makes gelato in the Italian style, which is denser and served slightly warmer, with more intense flavour. Worth trying both across a longer stay rather than picking a side.
Both have genuinely strong vegan and dairy-free ranges rather than a single token option — Ciuri Ciuri in particular offers almost as many dairy-free flavours as dairy ones, which is a real rarity and worth knowing if your group has mixed dietary needs.
Both sit close enough to Falmouth's harbour front that walking down to the water with your cone is easy — genuinely a nicer way to eat it than standing at the counter, and Falmouth's working harbour gives you something to watch while you do.
Both get busy on hot afternoons in peak season, with Ciuri Ciuri's small size meaning a short queue forms quickly. An earlier or later visit generally means less waiting for what is, after all, meant to be a quick treat.
